Fryer | Fryers are designed to cook product using hot oil or other media (a process called frying). Fryer equipment can use different mechanisms to heat the cooking media including natural gas and steam, and can be classified as either batch or continuous. Batch fryer equipment is designed to process a certain amount (or a “batch”) at a time. The batch of product is placed into the fryer equipment and after a proper amount of time has elapsed, the batch or product can be removed from the fryer. Once the previous batch has been removed, a new batch of product can be placed into the fryer. A continuous fryer works by processing a steady (continuous) stream of product so that different sections of product are in different stages of processing. As a general rule, continuous fryer equipment will have a higher product output than batch fryer equipment. |
